Vault City is a microbrewery based in Edinburgh, Scotland. It was founded in 2016 by Ross Stirling, David MacLennan, and Kieran MacLennan. The brewery specializes in making modern sour beers, which are beers that have been fermented with a type of bacteria called Lactobacillus. This type of bacteria gives the beers a tart, sour flavour.
Vault City’s beers have won numerous awards, including the World Beer Cup and the Great British Beer Festival. The brewery’s beers are available in bars and shops throughout the United Kingdom and in select markets around the world.
In addition to its brewing operations, Vault City also operates a taproom in Edinburgh. The taproom is a popular spot for beer lovers to sample Vault City’s beers and learn more about the brewing process.
