Pastore Brewing and Blending is a mixed fermentation sour and wild brewery based in Waterbeach, Cambridgeshire, UK. They were founded in 2016 by brewer and winemaker, Ben Pastore. The brewery produces a range of fresh and aged sour and wild beers, including fruited Waterbeach Weisses, Sour IPAs, and barrel aged wild ales.

Pastore’s beers are known for their complex flavours and aromas, which are achieved through the use of a variety of different yeasts, bacteria, and fruits. The brewery also has a large barrel program, which allows them to age their beers in a variety of different vessels, including oak barrels, wine barrels, and stainless steel tanks.
