Brouwerij Boon is a Belgian lambic brewery located in Lembeek, Belgium. The brewery was founded in 1791 by Sebastiaan Boon. Boon is one of the oldest and most traditional lambic breweries in Belgium.
Lambic is a type of beer that is brewed using spontaneous fermentation. This means that the wort (the liquid that is fermented to make beer) is exposed to wild yeasts and bacteria that are present in the air. This gives lambics their unique sour flavour.
Boon produces a variety of lambics, including Oude Geuze, Oude Kriek, and Faro. Oude Geuze is a blend of young and old lambics. Oude Kriek is a lambic that has been fermented with cherries. Faro is a sweetened lambic that was originally brewed for children.
Boon is also known for its fruit lambics. These are lambics that have been fermented with different fruits, such as raspberries, strawberries, and peaches.
