Founded in 1994 within the confines of Brighton’s Evening Star pub cellar, Dark Star Brewing began as a modest hobby that quickly spiralled into something much larger. Conceived long before the craft beer movement gained widespread popularity, the brewery’s inception was scribbled onto the back of a beer mat. Fuelled by determination, hard work, creativity, and a touch of inspiration from the Grateful Dead, Dark Star embodies an unabashed ethos of “brew (and do) what we want.” This unapologetic attitude towards brewing has been a driving force behind the brewery’s evolution. From its humble beginnings, Dark Star Brewing has grown into a respected name in the craft beer scene, guided by a spirit of experimentation and a commitment to crafting exceptional brews.
